Quick GF Choc-Chip Cookies

Some nights, when you’re popping on a good movie and the sweet craving hits, this is the cookie recipe I turn to. I love the nuttyness and texture of the cookies from the almond flour and the sharp dark sweetness of the choc-chips.

Ingredients:

  • 1/2 cup almond flour and 1/2 cup of buckwheat flour

  • 3/4 cup coconut sugar

  • 1/3 cup ghee/butter

  • 1/2 tsp baking powder

  • pinch of salt

  • 1/3-1/2 cup chocolate chips

Method:

Preheat the oven to 180c. Melt the ghee/butter in a small saucepan, add the sugar, and pour into a ceramic bowl to cool for 5 minutes, using a wooden spoon add the egg and stir vigorously until the texture and colour of the mix change to a light fluffy consistency. Fold in the flour, baking powder, and salt and stir to combine, finally add the choc-chips. Using a spoon, scoop portions of cookies and roll them with damp hands, placing them on a baking tray. Bake on the middle shelf of the oven for 12 minutes or until golden around the edges.

Makes 12 Cookies
