Energy/Lactation Cookies

These cookies are my go-to for post-partum people and others who just need a good nutrient dense energy lift. Packed with healthy nuts and seeds, these are lower in sugar than your regular cookie, so they won’t spike your blood sugar. They also contain ingredients to support breast milk supply.

I like to make these in big batches and then they’ll keep in the freezer, and deliver to friends who have given birth.

Ingredients:

  • 1 cup almond flour

  • 1/2 cup buckweat flour

  • 1/3 cup maple syrup/honey

  • 2 tsp vanilla extract

  • 1/2 cup tahini

  • 1/4 cup cocoa

  • 1 tsp baking powder

  • 1 tbsp chia seeds, flaxseed, sunflower seeds, and sesame seeds

  • 1/3 cup coconut oil melted.

  • A pinch of sea salt and extra chocolate to top

Method:

1. Preheat the oven to 180 degrees C.

2. Combine the ingredients together in a bowl, place in the fridge to set for 30 minutes.

3. Line a baking tray with paper. Using your hands roll the cookies into balls and then press onto the tray topping with a square of chocolate.

4. Bake in the oven for 10 minutes, let cool for 5 minutes.

Serves 8 cookies.
